After living in Germany for a while, I became quite fond of the traditional European beer styles, in particular wheat beers. After returning home years ago and finding the supply of quality beers to be very limited (unlike what you have today), I set out to brew my own. I craft beers that are typically balanced to slightly malty, with a focus on styles that have complexity with malty characteristics. I think hops are primarily there to provide balance and accent notes, and not to be an overwhelming experience. I strive to brew styles that are less common in the US craft brewery production, such as Taddy Porters, Milds, and German style Hefeweizens. My favorite recipes include a Pecan Brown Ale, Citra Kolsch, Berliner Weiss, and a Dunkelweizen.
